Wellness Wednesday: The Baby Vegan’s Raw Meal Plan

As a person who likes to eat – a lot – the idea of depriving myself of the many delicious cooked foods I enjoy was daunting. The most important hurdle of going raw is will power. It might sound cliché, but if you think it, you can achieve it.

During my detox I’ve not felt hungry, but I won’t lie, I’ve had struggles. They came in the form of a late night snack hanging out with friends. Even though I was not hungry, the social act of eating was overwhelming and I gave in. Trust me, the next day my stomach was not happy with my choice. I resolved to keep my cravings at bay because cravings are just that- cravings.

My meals have ranged from super simple to fancy, which has made this detox a lot more interesting. Here are some of my favorite raw vegan meals:

Breakfast:

Emmy’s Organic Blueberry Cashew Super Cereal

This is a great way to divert from smoothies. For overnight oats for breakfast, just add bananas, and you will be full until lunch!

Lunch:

Kelp Alfredo Noodles from Juice Press

I love zoodles because it lets you have that feel of eating pasta without all the carbs, but kelp noodles have won over my heart. They taste very similar to a vermicelli noodle; topped with the “Alfredo” sauce, it’s amazing.

Snack:

Macaroons

If you have a sweet tooth, these are moist, sweet and delicious enough to keep you away from the Oreos, and you do not need any fancy equipment to make these right at home!

Dinner:

Avocado Salad with Tomatoes, Olives and Hemp Seeds with Olive Oil Dressing

Avocados are a gift from the universe. If avocados were a man I would marry him and have mini avo-babies, but I will settle for salads. Chop up a ripe hass with a nice mesclun mix and you’ve got yourself a delicious avocado party that’ll leave you super full.
