Any college student understands the struggle of finding food that both tastes good and is good for you. Plus, by this point in the year we’re all sick of dining hall meals and the cold weather intimidates us from ever leaving the comfort of our tiny dorm rooms.
So, here’s a simple recipe from Home Cooking Memories taken from 250 Best Meals in a Mug that requires no more than 5 ingredients and 5 steps.
Brown Rice with Edamame and Pineapple
Servings: 1 | Preparation Time: ~10 minutes
Ingredients
- ½ cup instant brown rice
- ⅔ water
- ⅓ cup frozen shelled edamame
- ¼ cup diced fresh or drained canned pineapple
- 1 tablespoon teriyaki sauce
- Optional: chopped cashews, hot pepper sauce, sliced green onions, chopped fresh mint, cilantro
5-Step Instructions
1. In a mug, combine rice and water. Place edamame on top.
2. Cover with a small plate and microwave on high for 5-6 minutes or until almost all of the water has been absorbed. Remove and let stand, covered, for 1 minute to absorb the remaining water.
3. Stir in pineapple and teriyaki sauce.
4. Microwave, uncovered, on high for 30-45 seconds or until pineapple is heated through. Let stand for 30 seconds.
5. Stir on or sprinkle in optional ingredients.
